I hope you all had a lovely weekend! Ours was very nice, but boy did it fly by - just as I predicted! We got the game in, despite the damp weather - and we got our mums (kale, asters, etc.) for the front steps. The weather here has been drizzly and cool - perfect for fall baking. I made this "Butterscotch Bread Pudding" for Saturday lunch with Bill's folks, and had to share the recipe here - it was just so good!!
I found this recipe in my weekly "All About Thyme" e-letter. September 19th was National Butterscotch Pudding Day, and this was the featured link for that day. The recipe was easy to follow and even though I left out the pecans - my family doesn't like nuts in baked goods - it tasted delicious.

Butterscotch Bread Pudding with Bourbon and Pecans
(From Panera Bread)
3/4 cup light brown sugar
4 tbsp (1/2 stick) unsalted butter
1 tbsp vanilla extract
1/4 cup bourbon whiskey
8 large eggs
1/2 cup sugar
1 quart half-and-half
2 cups pecan pieces
8 cups 1/2-inch country white or sourdough bread cubes
Powdered sugar, for dusting

Preheat oven to 375 degrees. Butter a 9x13 baking dish.
To make butterscotch sauce, combine the brown sugar, butter, vanilla and bourbon in a small saucepan over medium heat. Simmer the mixture, stirring until the sugar is dissolved and the mixture is smooth in consistency. Cool 1/2 cup and set aside.
In a large bowl, whisk together the eggs, sugar, half-and-half, and the cooled butterscotch sauce. Fold in pecans and bread, transfer to the prepared dish, and cover tightly with tin foil. Bake 30 minutes, uncover, and then bake an additional 10 minutes. Gently shake the pan to make sure the pudding has set.
Serve with remaining butterscotch sauce, warmed, and powdered sugar.
(Note: vanilla ice cream is wonderful with this!)

I've been a SB fan for so many years - her cookbooks were some of the first I owned - and I just adore her beautifully illustrated newsletters. They're filled with wonderful seasonal cheer, crafts and recipes - and gorgeous pictures of her homes in Martha's Vineyard and California. Her blog is a feast for the eyes as well!
